Southwest Kansas is quietly emerging as one of the fastest-growing dairy regions in the country, as large modern dairies expand across the flat, open landscape once dominated by wheat and cattle.
The region offers the ingredients dairies want: abundant locally grown feed, room to build, and proximity to expanding milk processing plants that turn raw milk into cheese and powder for global markets. The industry has brought jobs and investment to communities hungry for both.
"The cows follow the feed and the processing, and both are here," a dairy manager said. The growth has also intensified competition for water and labor, straining resources in an already dry region.
Local officials generally welcome the investment while acknowledging the need to manage the environmental footprint of large-scale dairy operations.
